Ingredients (4 portions)
3 tblsp. Southwest Chipotle Sauce
50g pork tenderloin
3 oranges, juiced
3 tblsp. olive oil
1 tblsp. garlic powder
1 tblsp. paprika or smoked paprika
1 tsp. cumin powder
8-12 slices country style ham
8-12 slices Swiss cheese
1 tsp. mustard
1 pickled cucumber, thinly sliced
4 large bread rolls
mayonnaise
salt and pepper
Method
Preheat the oven to 180C.
Place the pork tenderloin in a roasting pan with low sides and sprinkle pork on both sides with salt and pepper.
In a medium bowl mix together orange juice, olive oil, garlic powder, paprika and cumin.
Once well mixed, pour the entire mixture over the pork tenderloin.
Roll the tenderloin around in the mixture to coat it well.
Roast the pork for about 20-25 minutes or until core temperature reaches 75C - 80C.
Remove the pork from the oven and allow it to rest a few minutes before placing it on a carving board and slicing it very thinly.
Set aside.
Spread the Farm Fresh Foods Southwest Chipotle sauce one side of the roll and mustard on the other.
Add ham, Swiss cheese, pork and the pickled cucumber.
Place the sandwich in the pan and bake until the cheese is melted.
Slice into triangles and serve with hand cut chips, Farm Fresh Foods Coleslaw Supreme and more Farm Fresh Foods Southwest Chipotle sauce.
